Reese's Peanut Butter Cup Cookies
Inn at Jackson ~  Jackson, NH

1 stick butter
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 teaspoon baking soda
1 package (14 ounces) of Reese's peanut
butter cups

Cream together butter, peanut butter,
granulated sugar and brown sugar.  Beat
in egg and vanilla.  Stir together flour and
baking soda and blend into creamed
mixture to make smooth dough.  Shape
dough into 1-inch balls.  Place in
ungreased mini-muffin tins and bake at
375 degrees for 8-10 minutes.  Remove
from oven.  Push Reese's cups into the
center of each hot cookie until only the top
of the candy shows.  Cool 10-15 minutes in
pan.  Remove and serve.

Makes about 50 cookies.
